German Meatloaf

Meatloaf:
1/2 lb ground beef
1/2 lb ground pork
1 medium onion -chopped-
3 T. bread crumbs
3 T. cold water
2 eggs
1/2 t. salt
1 t. paprika
2 t. fresh parsley -chopped-
1 t. prepared mustard
3 boiled eggs -peeled-
4 strips bacon
4 T. oil
1 c. beef broth

Gravy:
1/4 c. hot water
1/2 c. sour cream
1 t. cornstarch
1/4 c. water

Mix ground meats, onion, bread crumbs, cold water, and eggs. Add salt, paprika, mustard, and parsley. Put on a piece of plastic wrap and make into an 8 X 8 square. Put whole boiled eggs in a row along the middle of meat. Fold sides over and shape into a loaf. Note: rinsing hands in cold water will prevent sticking. Cube and fry two strips of bacon in a cast iron dutch oven. Add oil and brown meat on all four sides. Put rest of bacon on top and cook uncovered in a 350 degree oven. Bast with beef broth and drippings. Cook until meat is done.

Remove meat and add 1/4 c. hot water. Scrape bottom of dutch oven and bring to a slow boil. Mix corn starch with 1/4 c. water and add to dutch oven. Cook until thickened. Stir in sour cream. Serve meatloaf sliced with gravy over top.
