Danish Ebelskiver's


2 eggs separated
1/2 tablespoon sugar
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking powder
2 tablespoons melted shortening
scant 1 cup milk

Beat egg yolks; beat in sugar. Combine dry ingredients. Add alternately with shortening and milk. Beat egg whites until stiff, but not dry. Fold into batter. Grease an ebelskiver pan. Heat until smoking. Fill depressions about 3/4 full. When cooked on bottom, turn with two forks. Cook other side. Re grease pan between batches. If desired, dust with powdered sugar or drizzle with honey.
